Healthy baking tips + new recipe!

One thing I really love is the smell of fresh baked muffins… isn't it the best? I've been making these new Carrot Cake Muffins lately, and can't wait to bake another batch. They don't last long in my house! Not only are they super yummy, but they're gluten-free and contain zero refined sugar. I just shared the recipe on the blog today with step-by-step photos so you can see exactly how I make them!

What's great about these muffins is that you can also frost them like cupcakes for a more festive and decadent treat (they'd be awesome for Easter!) They would also be a great addition to brunch. If you're having brunch with your loved ones this Easter, here are some more recipes to try:

Since I like to bake homemade treats, I've taught myself how to take almost any recipe and make it healthier with just a few ingredient swaps. After you figure out how to do that, it really opens up a whole new world of options! Try these healthy baking swaps with your favorite recipes…

  • Instead of bleached enriched flour, use organic oat or spelt flour. Oat flour is made from just 100% whole oats. It's unrefined, full of fiber and compounds that help to reduce inflammation in the body. Note that recipes won't rise as well with oat flour, so for things like breads it helps to mix it with some organic spelt or organic whole wheat flour. Just steer clear of the bleached refined flours!
  • Instead of margarine or vegetable oil, use grass-fed butter or coconut oil. Grass-fed butter is higher in nutrients than regular butter and not filled with hydrogenated GMO oils like most margarines. Coconut oil is a great substitute for butter in just about any recipe too.
  • Instead of refined white sugar, use organic coconut sugar, honey or maple syrup. These sweeteners still have their nutrients intact, unlike refined white sugar that has zero nutritional value and can be GMO.
  • Instead of traditional baking powder, choose an aluminum-free version. Most baking powders contain aluminum, which is linked to Alzheimer's. The popular Clabber Girl brand is also made with GMO ingredients.
  • Instead of imitation vanilla, use real vanilla extract. Imitation vanilla extract is  made with vanillin, which is typically sourced from petrochemicals and wood pulp. It also doesn't contain the antioxidants found in real vanilla extract that are good for the body.

Don't put this in your bathtub!

Yesterday, I released a brand new investigation into a very popular "handmade" cosmetics company. I debated whether or not to take this on, but after seeing your comments on social media, I'm so glad I did!

  3. Sodium Laureth Sulfate (SLES) - May be contaminated with 1,4-dioxane, which is linked to cancer.
  4. PEG-100 - Can be contaminated with Ethylene Oxide and 1,4 Dioxane, which are both linked to cancer.
  5. Fragrance - Companies refuse to tell you what's in these, which can include highly toxic ingredients, hormone disruptors, and carcinogens.

These can be worse than food chemicals...

If you read ingredient lists like me, I hope that doesn't stop at just food.

Food chemicals are nasty, but the skincare and cosmetics industry is even worse. The FDA doesn't regulate cosmetics as rigorously as pharmaceuticals or food – allowing companies to get away with using potentially harmful ingredients that are banned in other countries. Many cosmetics, lotions, soaps, and body scrubs contain toxic petrochemicals made from oil, known carcinogens, reproductive toxins, and neurotoxins.

One thing I did years ago was count the number of personal care products I used from morning to night – My number was 15. I'd like you to do this same little exercise! Count the number of products you use in a 24 hour period, and report back to me. Please share the results by leaving a comment on my Facebook page or replying to this email!

As you start to think about your personal care or beauty routine, here are some tips:

  • Look for products made with simple organic ingredients.
  • Choose fragrance-free products, or those that are only scented with essential oils.
  • Go artificial dye-free on everything that goes on your skin.
  • Adopt a minimalist approach – do you really need to coat your hair in a chemical bath of 5 different products every day? How many products do you use on a daily basis? Think about the money you'd save if you just used a couple safe products.
  • Try using coconut or sesame oil as a moisturizer and makeup remover, and oatmeal & salt for a body scrub. If it's safe to eat, it's safe to put on your body.
  • Give your face a rest a few times a week. Spend a couple of days without makeup and allow your skin to naturally be rejuvenated.
  • Vote with your dollars. Stop supporting companies that are harming the environment, your family and most importantly your own body with crazy chemicals!

The healthiest burger chains (New investigation!)

If you're careful about what you eat, you probably don't frequent chains like McDonald's or Burger King, but where do you go when you want a burger? I recently asked you to weigh in on my Facebook page… and many of you said you like burgers from Elevation Burger, Culver's, In-N-Out, Next Level, The Habit, and Red Robin.

There are several higher-end and farm-to-table burger chains popping up, advertising their "all natural", "organic" and "grass-fed" burgers. So I had to find out… are they really legit? Are they secretly serving GMO ingredients? Do they really serve grass-fed burgers? Or, is their meat really just from a filthy factory farm with a slick marketing campaign?

I never do this...

There's someone I really admire at the gym that I see every week. She's beautiful, she's smart and always has perfect form doing all the exercises… and then I saw her doing something which inspired me to share this habit I never ever do.

I used to think this habit was helping my health but I was wrong.

What was she doing? She was CHEWING GUM.

I used to be addicted to chewing gum too. I was led to believe if I chewed gum, I would reach less for sugary substances and it would help me maintain my weight. But after giving up this habit years ago, I've never been more healthy or had better digestion and here's why:

First of all, gums are full of artificial sweeteners that actually promote weight gain. Artificial sweeteners work against your body. When you chew something sweet – even when it has no calories – your brain is tricked into wanting more calories because your body is not getting enough energy (i.e. calories) to be satisfied. So you keep craving sweets, eating sweets, and gaining weight. This is why a lot of people never reach their full health potential or weight loss goals, because they are constantly being pushed around by these chemical artificial sweeteners that trick the brain and body.

Just take a look at the other questionable ingredients in popular gum products:

Eclipse Spearmint Gum: Sorbitol, Gum Base, Maltitol, Glycerol, Natural and Artificial Flavors, Acacia, Soy Lecithin, Aspartame, Color (Titanium Dioxide), Acesulfame K, Carnauba Wax, BHT.

Orbit Cinnamon Sugar-free Gum: Sorbitol, Gum Base, Glycerol, Natural And Artificial Flavors, Hydrogenated Starch Hydrolysate, Aspartame, Mannitol, Acesulfame K, Soy Lecithin, Colors (Red 40, Red 40 Lake, Yellow 6), Xylitol, BHT.

Wrigley's Doublemint Gum: Sugar, Gum Base, Dextrose, Corn Syrup, Natural and Artificial Flavors, Glycerol, Aspartame, Gum Arabic, Soy Lecithin, Acesulfame K, Color (Titanium Dioxide), BHT.

The second big reason I don't chew gum is because it messes with the body's ability to produce digestive enzymes, a critical substance that helps you get all the nutrition from food you need into your bloodstream. This even goes for gum that doesn't have controversial ingredients…

You see, every time you chew gum, you send signals to your brain that you are chewing actual food. Your body gets ready to digest food by creating the digestive enzymes your brain thinks you need. Now imagine doing this all the time and every day by chewing gum that isn't real food. You're tricking your body to produce digestive enzymes when they really don't need to. Over time your digestive organs become overtaxed and stop producing the amount of enzymes they once did.

Not to mention, chewing gum always made me feel bloated. No thanks!

What if you could chew something that was GOOD for you, freshened your breath and helped you digest food without the threat of reducing your natural digestive enzymes? You can!  Try chewing on fennel seeds. It's amazing what chewing on a little seed can do. I keep a little bottle of fennel seeds in my purse.

I like to chew some after a big meal. Fennel seeds smell like licorice and taste a little bit like it too. I chew about a ½ tsp and it's just enough to get my mouth instantly fresh and clean. By the way, you don't spit these seeds out like you would gum, you swallow them because they are food.

Chewing on fennel seed has been used for many years in Asia for medicinal purposes. Fennel seed is shown to prevent gas, heartburn, bloating and upset stomach, freshen your breath, improve eyesight, relieve hypertension, and help coughs and bronchitis.

I hope you ditch the gum and give fennel seeds a try! The next time someone asks you if you'd like a piece of gum, what are you going to say?

This made me really MAD.

I had the strangest conversation with a BIG supplement company this week and knew I needed to tell you about it immediately.

What they told me made me SO MAD. Here's what happened…

You see, I like to call up companies just like any customer would. This is how I get the real truth about their products and see how they treat people. This particular company was selling a very popular turmeric supplement, so I wanted to know if they test for heavy metals.

Once I got a product rep on the phone, I started asking him questions and suddenly, the conversation took a turn that I never expected…

He told me NOT to buy their turmeric supplement.

Completely aghast, I asked, "Why?!"

He said it is "poorly absorbed" by the body. He went on to tell me that I shouldn't even consider their turmeric supplement, and tried to direct me to some of their other formulations instead.

Knowing this is one of the best-selling turmeric supplements in stores, I asked, "Why do you continue to sell it, if you know it doesn't work?"

…and his response is what really made me angry.

He said, "Because people buy it".

This is exactly what is wrong with the Big Food companies. They really don't care about people, they just want to line their pockets.

Selling a product you know is worthless isn't the way anyone should do business. It's just flat out wrong. Companies should always put people over profits.

On an airplane, and this happened!

So, I recently had to fly to New York City, and on the plane something surreal happened...

I had Harley on my lap, and she spotted another passenger between the spaces of the airline seating.

The person made a face. Harley made a face back. And they had a cute, playful interaction.

I didn't think anything of it.

But when we landed, the lady who was sitting in front of me said, "Wow! Are you Vani?"

I said, "Yes."

She fired back, "I can't believe it! I just got Truvani!"

I was shocked.

I never thought I would start my own product line, but our food system needs to be changed.
